Medmont Mercantile Baked Lemon Pepper Chicken Recipe

Ingredients
- Medmont Mercantile Lemon Pepper Seasoning
- 4 boneless chicken breasts
- ⅓ cup of Rex Hill Seven Soils Chardonnay
- ¼ cup of olive oil
- 1 tbsp fresh lemon juice
- 3 cloves minced garlic
Instructions
- Preheat oven to 400 degrees F.
- Line a deep baking dish with parchment paper and set aside.
- Peel and finely chop cloves of garlic.
- In a small saucepan over medium-low heat, heat olive oil and minced garlic for about 2 minutes without browning the garlic.
- Remove the saucepan from the heat and add the Rex Hill Seven Soils Chardonnay and lemon juice. *If desired, add lemon zest for an extra kick of flavor
- Pour the contents of the saucepan into the bottom of the baking dish.
- Next, rinse the chicken and pat dry.
- Generously cover both sides of the chicken in Medmont Mercantile Lemon Pepper Seasoning.
- Place chicken in baking dish and set it in the oven for 30-40 minutes, or until the chicken is fully cooked and lightly browned (broiling if necessary).
- Once cooked, remove from oven, cover, and let rest for 10-15 minutes before cutting and serving.
