Medmont Mercantile Baked Lemon Pepper Chicken Recipe

YIELD: 4 servings   ACTIVE TIME: 20 minutes  TOTAL TIME: 55-60 minutes   

Ingredients

  • Medmont Mercantile Lemon Pepper Seasoning
  • 4 boneless chicken breasts
  • ⅓ cup of Rex Hill Seven Soils Chardonnay
  • ¼ cup of olive oil
  • 1 tbsp fresh lemon juice
  • 3 cloves minced garlic

    Instructions

    1. Preheat oven to 400 degrees F.
    2. Line a deep baking dish with parchment paper and set aside.
    3. Peel and finely chop cloves of garlic.
    4. In a small saucepan over medium-low heat, heat olive oil and minced garlic for about 2 minutes without browning the garlic.
    5. Remove the saucepan from the heat and add the Rex Hill Seven Soils Chardonnay and lemon juice. *If desired, add lemon zest for an extra kick of flavor
    6. Pour the contents of the saucepan into the bottom of the baking dish.
    7. Next, rinse the chicken and pat dry.
    8. Generously cover both sides of the chicken in Medmont Mercantile Lemon Pepper Seasoning.
    9. Place chicken in baking dish and set it in the oven for 30-40 minutes, or until the chicken is fully cooked and lightly browned (broiling if necessary).
    10. Once cooked, remove from oven, cover, and let rest for 10-15 minutes before cutting and serving.
    *Tastes wonderful over a bed of pasta.
